While grocery shopping, for some reason the fancy struck to make artichoke and spinach dip. (Could it be that the request was whispered in my ear by my 13 yo shopping partner?) Without a recipe, the assumed ingredients were purchased. Woohoo, pretty close. After a quick search online for a guide, the information was collaborated and adjusted and this version was created.
8 oz chopped spinach, thawed and drained
8.5 oz can quartered artichoke hearts, drained
6 oz cream cheese
1/2 cup grated Parmesan cheese
1/2 cup grated mozzarella cheese
1/2 cup mayonnaise
1 Tablespoon minced garlic
2 Tablespoons lemon juice
dash of cayenne pepper
*(optional: stir in real bacon bits for an extra flavor!)
Thaw and drain spinach. Add drained artichoke hearts. Combine with an inversion blender. Add other ingredients, blended after each addition. Heat in microwave about 3 minutes or put in oven proof dish and bake until heated thoroughly.
Serve with your favorite chips or crackers.
