Cover dish night at church. What to take, what to take? Ah, the package of quinoa I picked up at the grocery store a while back. I usually sauteed some squash but didn’t have those. But I did have half a bell pepper and a fourth of an onion. And, what’s that? A sandwich bag of black beans left from a “photo shoot” of a mock bowl of black beans! The package came with a lemon seasoning packet which I did use but added a dash more of lemon pepper. Also, the directions on this package gave the amount of water needed.
Dice desired veggies (1/4 onion, 1/2 bell pepper), rinse and drain quinoa, saute veggies AND quinoa in small amount of olive oil until lightly browned. Add required amount of water and seasonings. Cook about 15 minutes or until water is totally absorbed. Then it is good to go!
