Pantry Raid #11: Chicken Pesto Pita


For something quick but delicious before running out the door for yet another away basketball game, I was excited to have everything necessary for a pita sandwich.

With just a drizzle of olive oil in the saucepan, sear the pita bread on both sides. Then, lightly spread pesto sauce over one side. Next comes the shredded baked chicken (from the “prepping day“), shredded mozzarella cheese, sliced tomatoes and baby spinach. Fold and enjoy.
