Pantry Raid #9: Chicken Topped Salad

Now that I have plenty of baked chicken, when I hear “What’s for supper?” after I finally get home from two meetings, one right after the other, I’m ready. A nice bed of romaine lettuce, fresh diced tomatoes, and diced cucumbers topped with diced baked chicken breast. Top with your favorite salad dressing and serve with cheese quesadillas. (Heat a flour tortilla in a non-stick pan. Turn over and sprinkle shredded cheese all over it. Fold in half and continue heating until tortilla is browned. Turn over and brown other side. Cut in wedges.)
