Guest Recipe: Tortellini Soup


Today's Guest-Duane Hartness

Today’s recipe comes from a friend, Duane Hartness, a State Farm Agent, whose wife treats him (on occasion) to his favorite soup, Tortellini Soup! I asked him to share the secret recipe!

TORTELLINI SOUP
1 lb. ground Italian sausage
2 cloves of garlic
1/2 c. dry red wine
1 large can of tomato puree
1/2 t. basil leaves
8 az. tomato sauce
8 oz. cheese tortellini
1 c. chopped onion
5 c. beef broth
1/2 c. water
1 c. sliced carrots
1/2 t. oregano
1 c. zucchini
3 T. parsley

Cook sausage, garlic and onions. Drain. Add beef broth, water, wine, tomato sauce, puree, carrots, basil and oregano. Bring to a boil. Reduce to a simmer for 30 minutes. Stir in zucchini, tortellini and parsley. Cook until pasta is tender. Serve with fresh parmesan on top. YUMMY!!
