Pantry Raid #6-Salad with rice and beans

Just do it! That motto has worked for years for Nike and others have re-used and re-cycled the simple saying. And, it works well for me, too. Remember the rice and baked beans I put together for the cover dish dinner? Today’s creation was an interesting combination. First I put some mixed greens in my bowl, then topped that with a generous serving of the cold rice and baked beans left from the other night. On top of that came chunks of feta cheese (which, in my opinion, makes anything taste great!). A sprinkling of balsamic vinegar and a drizzle of olive oil was just the finishing touch it needed. Stirred to mix, it was delicious and enjoyed greatly.
