Pantry Raid (not to be confused with panty raid) Recipes is what I am calling this next series of recipes. I will mostly just raid the pantry or ‘frig or freezer and take what’s on hand to create something. It could be any course from appetizer to dessert. Unlike 40 Days of Soup, these may or may not be a daily post.
My first recipe to be created is challenging to name because of its many ingredients and flavors so I decided to name it Chicken 2012 since its birth was on the first day of the new year!
1 – 1 1/2 cups uncooked pasta shells
1 – 1 1/2 cups frozen mixed veggies, cooked
1/4 cup butter
1/4 cup flour
2 – 2 1/2 cups milk (or to desired consistency)
1 cup sour cream
1 cup shredded baked chicken breast (from supply of previously baked boneless, skinless chicken)
1 Tablespoon parsley flakes
1 Tablespoon dried green peppers
1 pickled jalapeno pepper, chopped
2 Tablespoons jalapeno juice
dash of Vegeta (Bosnian seasoning, can substitute with Mrs Dash or Herbamare)
salt and pepper
Cook pasta shells according to directions. Drain and set aside.
Cook frozen vegetables, drain and set aside.
Make a white sauce: melt butter in medium saucepan over medium heat and add flour, stirring to blend/brown. Gradually add milk and whisk to make smooth. Add sour cream. Then stir in chicken, seasonings, chopped pepper and pepper juice. Cook on low to blend flavors. Place pasta and veggies in a casserole dish and pour hot white sauce over them and stir to combine. Adjust seasoning with salt and pepper, if desired. It should be hot enough but if not can be placed in the oven, covered, for about 10-15 minutes. Heats well in the microwave, also.
