I had planned on making Lasagna Soup as recommended by a friend through facebook but, alas and alack, I can’t find the note from her with the description. Today I bought a couple of lbs of ground beef and have already browned it with a couple of chopped onions. Some will go into tonight’s soup and some into the freezer for future use. After a perusal online of lasagna soups (yes, there is a plethora of them available), I had the ingredients for something close to but not exactly like it, hence: Bowtie Soup was born.
Ingredients:
1 – 1 1/2 cups browned ground beef
1 onion (cooked with the ground beef)
2 Tablespoons garlic, minced (also cooked with the ground beef
1 large can petite diced tomatoes
1 can V8 juice (would have rather used tomato sauce but this is all I had)
8 beef bouillon cubes
1 Tablespoon dry parsley flakes (fresh would be better)
2 Tablespoons Italian seasoning mix
1/4 cup brown sugar
8 oz cream cheese (well, 4 oz because when the box was opened it appears someone-with the amount of visiting family it could be any number of people- had eaten 1/2 of it!)
1/2 – 1 cup shredded mozzarella cheese
Put all but the cheeses into a saucepan and cover with water. Heat to combine flavors, dissolve the beef cubes, and cook noodles. After about 20 minutes, turn down heat and add cheeses, stirring to melt.
Soup with cheeses added.
Straightforward recipe.
I’m wondering about the ground beef if that’s just assume to be cooked already?
why, yes, the beef is pre-cooked. Sorry if I didn’t repeat myself. When I bought a large package of ground beef, I browned it with garlic and onions and used some and froze/refrigerated some for future use. I also do that with chicken.
