Tonight was a revisit of the chili for the family that is still home for Christmas. We enjoyed train wreck. So, what soup to make? Well, we had some chopped celery and chopped onion left from the toppings. And, hiding in the overcrowded refrigerator is some left-over pho (pronounced “fu” like the beginning of “fun”) broth from the other night. With the kale and baked chicken to add, tonight’s soup was created. (I almost added the left-over mango guacamole my son-in-law made, but the flavors wouldn’t make friends!)
1/2 cup chopped onion
1/2 cup chopped celery
2 Tablespoons walnut oil
3 cups pho broth
handful of fresh, cut kale
1/2 cup or more of baked chicken, shredded
Saute onions and celery in oil for about 10 minutes. Add broth and bring to almost boil. Add kale and stir for about 10 minutes. Add chicken and let simmer to combine flavors.
Well, that’s all there is to it. Simple and quick and I don’t have to find room in the ‘frig for leftover celery or onion. And, there is now a little space where the pho broth had been.
Now, I just might make another soup just because I can and because I have my grandchildren here……Grandmarmee’s Special Soup (a dessert soup that is like a thick hot chocolate with peppermint marshmallows ……ooooooo, aaaaaaaaaaahhhhhh) Feed it to them and send them home with their parents. Nope, couldn’t do it, had too much mercy on the parents and the kids. After all, they have been picking candy off the gingerbread houses we made and eating the cookies we baked!
