40 Days of Soup: Day 39 – Hawaiian Chicken

Well, look at the time! It’s almost midnight and I haven’t made a soup yet. Crunch time, no make that crush time … crushed pineapple, that is. There is still a bit of roasted chicken left (I had baked some boneless, skinless chicken breast with chicken rub to have on hand for sandwiches during the influx of family.) and there’s a can of crushed pineapple in the pantry. Ooooooo, and some frozen coconut flakes in the freezer (duh, where else would they be?) Hardly seems necessary to list the ingredients, but here goes:

1 cup baked chicken, shredded

1 can crushed pineapple

1/2 cup coconut flakes

3 cups chicken broth (I made it with chicken bouillon powder.)


Put all in a saucepan and heat. That’s it. If you have FRESH chow mein noodles (mine were stale and made it taste terrible) you can top the soup servings with some. If not, the soup is good as is. (Or, if your  family didn’t want to wait until the movie was over to have soup and got take out Chinese and there is some rice left over you can throw that in to the soup.) Recycle, baby!
