40 Days of Soup: Day 31 – Loaded Baked Potato


One of my favorites and another time I get to use my immersion blender.

4 baking potatoes
1 cup broccoli florets
4 Tablespoons butter
1 cupmMilk (or more)
2 oz cream cheese
1/3 cup cheddar cheese, shredded
1/3 cup sour cream
1/4 cup chopped chives
Bacon bits, optional (I use the packaged Real Bacon bits)

Prepare the potatoes however you want. (I peeled and cut up three and microwaved 2.) Boil the cut up potatoes in salted water while other bake in the microwave (or oven). Don’t drain the boiled potatoes. At this point you can puree the potatoes if desired or leave it chunky. While still hot, add the butter and cream cheese and stir to melt/dissolve. Then add milk, cheddar cheese, sour cream, cooked broccoli florets, chives and bacon bits. Add more milk, or water, if needed. Serve with shredded cheddar cheese on top.
