Ok, it’s the end of the day and I haven’t made a soup. (Already went to the basketball game- now 7 -3.) What do I have and what is fast (since it IS 1:20AM tomorrow!)? Here it is.
2 cups water
1/2 bag (about 6 oz) frozen mixed veggies
handful of baked chicken
1/4 cup tomato bouillon with chicken flavor
1 sliced* pickled jalapeno (still using them up, I’m telling you it was a big can!)
*The peppers are whole so tonight I used my kitchen scissors to cut slices and I really like the way that works.
Put all ingredients except sour cream in a saucepan and bring to a boil. Boil about 20 minutes or until rice is done. Either stir in some sour cream or serve with a dollop on top. This helps to counter the spice of the pepper.
