40 Days of Soup: Day 25 – Lemon Chicken with Artichoke, Okra, and Kale


Refreshingly tart and different, this soup can be made without the chicken and be a veggie soup. It’s creation came about by a conglomeration of suggestions. Thanks Elizabeth and Michelle.

Ingredients:

1 onion

3 stalks of celery, diced

1 Tablespoon garlic, minced

1 16 oz. bag of frozen sliced okra

2 Tablespoons (or more) of lemon juice

2 Tablespoons (or more) of lemon pepper seasoning

1 1/2 – 2 cups cooked boneless, skinless chicken (mine was saved from baking earlier), diced

1 can artichoke hearts, small size cut in half

3 Tablespoons dry chicken bouillon

1 handful of fresh kale, washed and torn

water to fill pot

Instructions:

Saute diced onion and celery in saucepan with olive oil for about 10 minutes then add minced garlic. Stir until onions are clear. Add all other ingredients and simmer on low for about 30-45 minutes or until kale is tender. Stirring to blend. Adjust flavoring by adding more lemon pepper seasoning and/or lemon juice.
