40 Days of Soup: Day 13- Lemon Lentil Potato

Too busy of a day to create a totally new, crock pot or long cooking soup so the choice for the day is Lemon Lentil Potato, a quick to make, easy throw together I created a long time ago. It is vegetarian, too.

1/2 package of dry lentils

1/2 stick butter

3 medium potatoes, peeled and diced

1/4 cup lemon juice

1 T Tones’ lemon pepper seasoning

Put lentils in saucepan and fill pan about 3/4 full. Add all other ingredients. Bring to a boil, stirring and then lower heat to a simmer and cook until potatoes are soft, about long enough to go take a shower and get dressed for the busy day! (oh, and type up a recipe on a blog post after checking email) This really tastes good the second day, too.
