40 Days of Soup: Day 8-Cumin Beef and Beans

After driving/riding for over 10 hours and getting in after midnight, what soup could be quickly made before going to bed? O.k., what’s on hand? Ground beef, an onion left from the bag for Thanksgiving, and always minced garlic. Start with this, dicing onion and browning it with meat and garlic. Drain and add water. What else? A small can of diced chili peppers, a drained can of black beans, one can of diced tomatoes, beef bouillon cubes (4), 2 T of tomato/chicken bouillon powder, 2 T cumin, 2 T chili powder and later added one drained can of white navy beans to increase volume of soup. Salt and pepper to taste.

Quick and easy. Just needs to simmer a bit for the flavors to blend.
