40 Days of Soup: Day 7-Tailgate Stew


Tailgate party for parents of players at Wake Forest calls for a hearty soup. Recipe chosen and sorta followed was Hungry Man Soup. There were onions, celery and bacon left from cooking Thanksgiving so those were diced and sauteed together. (celery and bacon aren’t in the recipe.) Hungry Man only calls for field peas but a big bag of mixed beans was used instead, rinsed and put in the crock pot covered with water with 10 beef bouillon cubes. The sauteed veggies and bacon were added to the pot. Then a pound of ground beef and diced smoked beef sausage were browned with minced garlic and added to the pot. A large can of minced green chili peppers were added to spice it up a bit. I also added about 1 T each of dried green peppers and dried red peppers that I had on hand. The meatiness of this soup should satisfy the manly appetite. All was cooked for hours on low to be ready to take to the game.

The ingredients are (to review):

2 diced onions

6 stalks of celery

1/2 pound of bacon

2 lb bag of mixed beans

10 beef bouillon cubes

1 large can of minced green chili peppers

1 lb ground beef

1 lb smoked beef sausage

2 T minced garlic

1 T each dried red pepper and dried green pepper
