40 Days of Soup: Day 1- Cream of Chicken and Noodle


The coolness of the night called for soup. What is available in the freezer of cabinet? Found: box of noodles and frozen baked chicken, shredded. Guess it’s going to be chicken noodle. (This soup prompted a 40 day adventure. My husband, after enjoying 2 or so bowl said, “what we need is a pot of soup every day.” So, it began. The challenge was on. The rules: create out of what’s available.)

2 T butter

2 T all purpose flour

1 cup milk

1/3 cup grated Parmesan cheese

chicken bouillon

twisted noodles

baked chicken, shredded

First a white sauce was made: melt butter, add flour and stir to blend. Slowly add milk stirring to blend evenly then stir in Parmesan cheese. To the sauce, add water and chicken bouillon and thoroughly mix. Add chicken and noodles. Season with salt and pepper and a dash or two of dry mustard.
