I discovered another delicious use for the Raspberry Jalapeno Pepper Jelly I sell at the Baron York booth…chicken salad. I WAS going to make my regular chicken salad but discovered I only had two of the needed ingredients (chicken and craisins) …aaaarrrrgggghhhhhh. But, neccessity is the mother of a new recipe. Because I didn’t have honey mustard I was going to use mustard, mayo and some honey and make my own version. Since my honey had crystalized I looked for something else sweet. Yes, there on the ‘frig door was some RaspberryJalapeno Pepper Jelly. I added some. I didn’t have celery but there on the counter was an apple that needed to be used. Diced it and added it. Out of walnuts so I crunched up some pecans and threw those in. Might be one of the best chicken salad versions I’ve made.
So here is the recipe/summary:
1 can of white chicken breast, shredded
1/2 cup of craisins
1 apple, diced
1/2 cup pecans, chopped
1/4 cup mayo
1/4 cup mustard
1/4 cup Raspberry Jalapeno pepper jelly
Mix, let “sit a spell” to mix the flavors.
