T minus 17 days and counting


Got a lot of recipes typed and one tested, well, retested. The easy cheeseycake squares are too good! Ate way more than I should have. The name says it all: It is very easy and is like a cheese cake and is cut into squares! DUH! So, here’s the recipe:
Preheat oven to 350˚.
Place 1 stick of butter in a 9 x 13 pan and put in oven to melt.
In a large bowl, mix with fork 1 box yellow cake mix (butter recipe) and 1 egg until totally combined.
In another large bowl, mix 8 oz. softened cream cheese, 1 tsp pure vanilla, 2 beaten eggs and 3 1/2 cups powdered sugar.
Pat cake mixture over melted butter.
Top with cream cheese mixture.
Bake 30 minutes or until golden on top.
Cool before cutting into squares.
(optional: top with coconut flakes)
